Monosodium glutamate was invented and patented in 1909, after Kikunae Ikeda observed that glutamic acid in seaweed gave seaweed its flavor-enhancing characteristics. Monosodium glutamate is composed of processed/manufactured free glutamic acid, the unwanted by-products of manufacture (impurities) that invariably accompany its production, sodium, and possibly moisture.
